The course gives an introduction to selected topics relevant to human nutrition science.Topics covered include dietary recommendations and nutrient requirements for adults, under- and overnutrition, special dietary patterns and nutri-(epi)genetics.

Lecture on methods to evaluate nutritional quality of food, focusing on chemical / physical tranformations of the food matrix as well as of selected components, occurring durch processing and reformulation. Elective exercises and readings support deeper understanding.
