Abstract

This course included basic aspects of micro and macro nutrient nutrition. Micronutrients studied included fat-soluble vitamins, water-soluble vitamins, minerals and trace elements. Macro nutrients included proteins, fats, carbohydrates and energy metabolism. There was a focus on the fate of micro- and macro nutrients during food processing.

Objective

To introduce the students to the fundamental aspects of human nutritionin relation to food.

Content

The course is devided into two parts. The lectutres on Micronutrients are given by Prof. Hurrell and the lectures on Macronutrients are given by Prof. Wenk. Micronutrients include fat-soluble vitamins, water-soluble vitamins, minerals and trace elements. Within this part there is also a discussion of the fate of micro- and macro nutrients during food processing. Prof. Wenk introduces some basic nutritional aspects of proteins, fats, carbohydrates and energy metabolism.
