Abstract
Antimicrobial compounds are part of the antimicrobial defenses of plants and animals. Survival of these macroorgansims in a microbe-loaded environment is impossible. The course will describe the most important chemical compouds, their mechanisms of action and intergration into antimicrobial defense systems. The use of such compounds in food preservation will be reported.
