Abstract
The term `Urban Food` implicitly questions how the production, processing, distribution, consumption and disposal of food influence the relation between city and countryside. In the thesis elective course, students analyze different urban structures of Alpine cities and their territories from the perspective of food-systems.
Objective
The analysis that was part of the elective course forms the basis of this focus work/thesis elective. On a regional level, specific cities and their territorial relation to their hinterland are investigated here from an historical and contemporary point of view. The work will be presented in the form of an essay film. An historical and technical introduction to this format is an integral part of the course.
Content
The production, processing, distribution, consumption, and disposal of food have perpetually affected the relationship between city and countryside. In this way, the industrialization and globalization of food systems contributed significantly to the urbanization of the landscape. On the other hand, systems of logistics and consumer behavior are strongly affected by processes of urbanization. Here we see that the city and its food systems have a mutual influence on each other.
